Enoki is a mushroom that is well-known for its role in Japanese cuisine, where it is also known as Enokitake. Commercially farmed enoki is a small-capped, long, thin white mushroom. They are grown in darkness and in high CO2 environments to encourage lengthy growth and to keep them pale.
Found commonly across the globe, this saprophytic mushroom is extremely temperature hardy, being able to withstand even single digit temperatures!
It’s also quite tasty, and if prepared right, adds a lovely element of CRONCH to some soup.
